Simple Sexy Salads

These salads are really quite simple to put together but they are so flavorful that even salad skeptics will be smackin’ their lips.

This exact salad made an appearance on the blog many months ago but without a proper recipe to go along with it. As with most salad recipes, you can change up the ingredients–take out what you don’t like/have and add what you like/have. Peter likes to make this type of salad with other ingredients including chick peas, corn and grilled calamari.

It’s really the ‘dressing’ that is key.

Black Eyed Pea Shrimp Salad

Ingredients:

  • 1 large tomato
  • 2 celery stalks
  • 1/2 large green pepper
  • 1/2 small red onion
  • 1/4 cup fresh cilantro
  • 1 cup black eyed peas, cooked
  • 7-10 large shrimp, grilled

For the Dressing:

  • 1 TBSP extra virgin olive oil
  • 2 TBSP rice wine vinegar (you can use white wine, apple cider, balsamic…)
  • 1 TBSP fresh lime or lemon juice
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp sugar (or sweetener of choice)

Directions:

Chop all ingredients (excluding the black-eyed peas) into small pieces of roughly the same size. In a large bowl, combine the dressing ingredients and whisk with a fork until well combined. Toss in veggies, beans, and shrimp.

Beet Orange Feta Salad

Ingredients:

  • 1 large or 3 small beets, roasted/steamed + chopped
  • 1 medium orange
  • 1/2 medium avocado, sliced
  • 1/4 cup feta cheese crumbles
  • spring mix
  • olive oil + salt + pepper to taste

Directions:

Combine ingredients in a large bowl. Slice the orange into wedges and squeeze the remaining juice into the salad. Add olive oil, salt and pepper to taste.
